Lifesaver Biscuits

To me, having a nice cup of tea with a biscuit is similar to having a big warm hug. I have found that nothing quite hits the spot in the same way! Here is a recipe for my Lifesaver Biscuits. They give me the taste, texture and crunch that I need without subjecting myself to the big hit of sugar that a regular biscuit would. These biscuits provide good amounts of protein, beneficial fats and fibre, so they are genuinely filling, and likely to help keep you satisfied for longer than a regular, high-sugar biscuit. This recipe has been around for a while, and it’s a real winner with my clients.

INGREDIENTS

  •  1 cup of almonds

  • ½ cup of pecan nuts

  • ½ cup of cashew nuts

  • 3 tablespoons of ground linseeds

  • 1 cup of buckwheat flour or gluten free flour

  • ½ cup of maple syrup

  • ¼ cup of water

  • 2 large medjool dates (pitted)

  • 3 tablespoons of cacao power

  • 2 teaspoons of cacao nibs

  • 2 tablespoons of coconut oil

DIRECTIONS

Start by blending all of the nuts in a food processor until ground. Then simply add all of the other ingredients and blend everything together until it has formed a sticky dough.

Place the sticky dough onto baking parchment, then place another sheet of parchment on top and use a rolling pin to roll it flat until it is about the thickness of a £1 coin. Remove the top piece of baking parchment, then transfer onto a baking tray and cook at 180C for around 20 minutes.

Once cooked, remove from the oven and leave it to cool.  From there, slice it into biscuit sized squares.

Enjoy with a regular cup of tea, or better still experiment with caffeine free alternatives like Red Bush (Rooibos) tea or chamomile tea.
