Raspberry Surprise Chocolate Porridge

It’s called Raspberry Surprise Chocolate Porridge as I used to make it a lot for my children when they were young and I’d bury all the raspberries below the surface for them to find. Here’s the very crude recipe (as always, adapt as you see fit!)

INGREDIENTS

  • 1/2 cup of oats

  •  1/2 cup of ground almonds

  •  2 teaspoons of cocoa power

  •  1 teaspoon of maple syrup or honey

  •  3 cups of the milk of your choice

  •  A handful of frozen raspberries

DIRECTIONS

To make the porridge simply heat all the ingredients except for the raspberries in a pan on the stove. Bring to the boil and simmer for 4-5 minutes, stirring all the time. Add more milk if it becomes too stodgy. When the porridge is cooked, transfer to a bowl, scatter the frozen raspberries on top, then submerge them into the porridge using the back of a teaspoon. The key with this porridge is to transfer it to the bowl when it’s piping hot as that way the raspberries defrost and go nice and gooey for a lovely sweet surprise as you eat! Do make sure you let the porridge stand for a couple of minutes before eating to allow the raspberries to do their thing and prevent you from burning your mouth.
